This Indian recipe has many benefits. First, it is an economical, complete meal for a family because its ingredients are affordable commodities, namely, rice and lentils. Second, it is a nutritious recipe because rice is rich in carbohydrates and lentils are rich in proteins. Third, with its ease of preparation, you do not need a complicated chef’s formula.
To prepare Khichdi, take 1 cup of rice and 1 cup of lentils. Wash and drain thoroughly. Take 4-5 cups of water in a large pot, and add rice and lentils from their cups along with one-fourth teaspoon of turmeric powder, a small crushed-ginger-piece, and salt to taste to the pot. Cover the pot, and let it cook until rice and lentils are tender. Heat 2 teaspoons of ghee, which is butter oil, in a small pot and add some cumin seeds to it; black pepper may also be added as garnisher; then put these contents in the large pot containing cooked rice and lentils. Your khichdi is ready, and you can serve with butter, roasted papad, which is a large piece of crispy cracker, and yoghurt.
So enjoy this simple Indian khichdi when your pocket is tight, or when you do not have much time to buy vegetables from the market. Cook it with love, serve it with love, and eat it with love. It’s khichdi time!
